I must admit that if you have the right ingredients, it is not hard to make a delicious chicken soup. It is so versatile and you can add as much or as little to it as you please.
For me, I love making my chicken soup as nutrient-dense as possible, which often includes lots of vegetables, chicken bone broth and some sort of healthy fat, like coconut cream or thickened cream.

Method
- Sautee extra virgin olive oil, garlic and onion in fry pan or Dutch oven.
2. Add celery, capsicum, carrot and corn to pan and stir until well sauteed.
3. Bring shredded roast chicken to pan and stir well.

4. Add chicken bone broth and coconut cream to pan and stir well. Cover the pan and let it simmer for 10 minutes.
5. Season with garlic salt, mixed herbs, salt and pepper and stir. Continue to simmer for another 15 minutes.

6. Add in rice noodles and stir. Continue to simmer for another five minutes.
7. Serve cooled with some sourdough bread or on its own.

Recipe Notes
- You can add any soup-worthy vegetables to this recipe, like mushrooms, parsnip, Bok choy, spinach or kale.
- I like to use my own chicken to roast and season, however, you can always buy store bought chicken and shred it for the recipe.
- I like to use coconut cream for this recipe. However, you can also use coconut milk, thickened cream or omit the cream altogether. I would suggest adding some more water if you are not using any cream, to make it more soupy.
- The rice noodles are light and easy to prepare. However, you can also use egg noodles, glass noodles or even Jasmine rice for this recipe, for a more carbohydrate-heavy meal.
- I like to use bone broth in my meals, for its glutamine and collagen benefits, however, you can always buy chicken stock as an alternative. I like to use this chicken bone broth.
- I like to vary the types of herbs and seasoning I use depending on what I have on hand, but you can add some basil, sage, parsley or coriander to this dish to make it more flavoursome.
