Hearty and Nourishing Chicken Noodle Soup

This hearty and nourishing chicken noodle soup is packed with lots of immune-boosting nutrients. Plus you will love the Asian-inspired twist with the inclusion of coconut cream and rice noodles. It is a perfect warm and easily digestible meal for postpartum, too.

Equipment

  • 1 Chopping knife
  • 1 Chopping board
  • 1 Fry pan or Dutch oven
  • 1 Saucepan

Ingredients
  

  • 1 tbsp Extra virgin olive oil
  • 4 cloves Garlic
  • 1 Brown onion
  • 3 sticks Celery
  • 2 Carrots
  • 2 Corn cobs
  • 1 whole Roast chicken
  • 500 ml Chicken bone broth (or stock)
  • 2 cups Coconut cream
  • 3-4 cups Water (filtered)
  • 2 cups Rice noodles
  • 1 tbsp Garlic salt
  • 1 tbsp Mixed herbs
  • Salt and pepper (to season)

Instructions
 

  • Sautee extra virgin olive oil, garlic and onion in fry pan or Dutch oven.
  • Add celery, capsicum, carrot and corn to pan and stir until well sauteed.
  • Bring shredded roast chicken to pan and stir well.
  • Add chicken bone broth and coconut cream to pan and stir well. Cover the pan and let it simmer for 10 minutes.
  • Season with garlic salt, mixed herbs, salt and pepper and stir. Continue to simmer for another 15 minutes.
  • Add in rice noodles and stir. Continue to simmer for another five minutes.
  • Serve cooled with some sourdough bread or on its own.

Notes

  • You can add any soup-worthy vegetables to this recipe, like mushrooms, parsnip, Bok choy, spinach or kale.
  • I like to use my own chicken to roast and season, however, you can always buy store bought chicken and shred it for the recipe.
  • I like to use coconut cream for this recipe. However, you can also use coconut milk, thickened cream or omit the cream altogether. I would suggest adding some more water if you are not using any cream, to make it more soupy.
  • The rice noodles are light and easy to prepare. However, you can also use egg noodles, glass noodles or even Jasmine rice for this recipe, for a more carbohydrate-heavy meal.
  • I like to use bone broth in my meals, for its glutamine and collagen benefits, however, you can always buy chicken stock as an alternative. I like to use this chicken bone broth.
  • I like to vary the types of herbs and seasoning I use depending on what I have on hand, but you can add some basil, sage, parsley or coriander to this dish to make it more flavoursome.
  • If you are in postpartum season, it is crucial to eat warm, soft and easily digestible foods. This helps with blood circulation, digestion and muscle recovery.
